🎉 Tasting Event - November 14, 2024
 
📍 The event was attended by partners of the E.O. of the project #PROLAMB & industry stakeholders
📍 Initially, Dr. Vasiliki Kotsabasi, Scientific Coordinator of the project for the Animal Research Institute of ELGO DIMITRA, presented the experimentation conducted at the Institute’s facilities.
🥩 This was followed by a discussion and exchange of views on the development and challenges of the sector regarding the production of lamb meat from heavy carcasses.
🥩 The event concluded with the tasting of two different meat samples, during which participants filled out questionnaires to help us gain a comprehensive perspective on the new products under development.
We invited food critics, chefs, journalists, and restaurateurs to taste lamb from heavy carcasses, prepared in different cuts and various cooking styles. 
The cuts were made with care by the butcher Mr. Thanasis Diamelas at his butcher shop and restaurant, Diamelas Meat & Restaurant SKG 🔪🍴
 
We compared the flavor and performance of meat from different animal breeds and experimented with various feeding regimens. The results were impressive! Greek lamb meat proved to be superior in both taste and quality. 
 
The Pro-lamb project aims to explore the potential of lamb meat from heavy carcasses. Our goal is to increase the income of our farmers and reduce imports of heavy carcasses in the Greek market! 
 
Second test of lamb measurements - heavy carcass
 
📍 First, we measured pH, color, and shear force. These parameters are essential for evaluating the meat's quality, tenderness, and overall sensory characteristics.
📍 Then the project partner #Diamelas_meat made cuts to evaluate the Heavy carcass model and in collaboration with the #Chef’s_brigade cooked the different parts in order to evaluate the cooking behaviour of the meat, its market potential and quality characteristics.
📍 We are also awaiting the results from our upcoming trials to obtain comparative data between different breeds and farming systems. This will help us draw more comprehensive conclusions and optimize production practices.

📍 Cuts and Weighing of Each Piece were carried out to assess the yields of this specific breeding model, both on the whole carcass and on individual cuts. This process allows us to accurately evaluate performance and determine the commercial viability of each part.
 
📍 We are awaiting the results from the upcoming trials to obtain comparative data between different breeds and rearing systems. This will help us draw valuable insights and refine the production model for optimal outcomes.
 
 

Participation in the 30th Agrotica

The #ProLamb participated in the 30th Agrotica at the stand of the project coordinator #AFS where the project’s goals and expected outcomes were discussed with interested visitors. A highlight of the event was the visit from our collaborating producer, the Vouronikos family, through our project partner #ΓΑΛΑΕΛΑΣΣ at Elassona.

The Operational Group of the project #Prolamb  conducted visits to its collaborating livestock farmers for the documentation and guidance of the heavy carcass trial. Specifically, they visited the farmer and partner of Proud Farm in Aridaia, followed by the livestock unit of Vouronikos in Azoros, Elassona, a partner of GALAELASS, where the necessary breeding data were recorded, and the farm was guided for the trial production of heavier carcasses. Finally, the visits concluded at the facilities of KIVOTOS in Pella, where breeding data were documented, and the partner received essential guidance for the production of heavier carcasses in two different breeds.
